摘要:A method of producing intact particles creating appearance of cheese

particulates in a shelf stable pasteurized sauce is provided. A gelling agent is included inan oil-in-water emulsion, which is submerged in an ionic bath, to form particulates havingthe appearance of cheese but which do not melt when incorporated in a pasteurizedsauce.
